I’ve always loved meatloaf, but now that the new Weight Watchers Freestyle is officially out there’s a million more reasons to love a good turkey meatloaf! I’ve always used this basic recipe for meatloaf, whether turkey or beef meatloaf. It’s so simple and quick you can get it on the table in about 30 minutes! 1sp Italian Turkey Meatloaf
Serves 6, 1sp per serving
1.25 lb 98% lean ground turkey
1 small onion, diced
1 tsp salt
Pepper to taste
1/2 C panko breadcrumbs
1 tsp tomato paste
1.5 tsp dried Italian seasoning
1 tsp Worcestershire sauce
1 egg, beaten
Toppings: light mozarella, ketchup, or marinara
1. Preheat oven to 400 degrees
2. Combine ground turkey, onion, salt, pepper, breadcrumbs, tomato paste, Italian seasoning, Worcestershire sauce, and egg in a large mixing bowl. Make sure its well mixed, but not over mixed. The best way is to use your hands.
3. Form loaf shape on parchment lined baking sheet. Bake for 30-40 minutes (this varies based on your oven), until a digital meat thermometer reads 165 degrees internally.
4. Top with 1 TB light mozarella or ketchup and enjoy!
