My first round of Whole 30, I ate a ton of cauli rice. Honestly, I kinda over did it! Don’t get me wrong I make an awesome Chipotle copy-cat cilantro lime cauli rice. This variation of cauli rice is SO easy to make and SO flavorful. This rice goes well with Mexican and Spanish dishes, sloppy joes, burgers, etc.. It really works well as a side for any dish! I’m going to be sharing a series of tasty cauli rice recipes on the blog during the remainder of my April Whole 30. Cauli rice is so versatile and I often forget that, which makes it easy to get bored. So get ready for a few super tasty cauli rice recipes that just might make up for them not being made of real rice! 😉
Savory Seasoned Cauli Rice

Ingredients
12 oz frozen cauliflower rice (I use Trader Joes)
1 tsp concentrated tomato paste or 2 tsp canned tomato paste
1/2 tsp season salt (I use Trader Joes)
1/2 tsp onion powder
1/2 tsp garlic powder
Salt and pepper to taste
Directions
1. In a medium skillet sprayed with oil, heated over medium high heat add cauli rice and cook per bag directions. Add spices and stir.
2. After cooked through, add tomato paste and use a wooden spoon or rubber spatula to incorporate it throughout the rice. The tomato paste can get clumpy so use the back of your spoon to spread it out evenly throughout the rice.
Note if you don’t have seasoning salt, you can make your own
