All of my followers over at my Instagram this recipe is for you! Y’all sure know how to make a girl feel good! So many of you requested this simple weeknight dinner over at my page– I just had to share. The truth is, recipes like this are second nature to me. I grew up with my mom making simple, but delicious meals like this one and I rarely saw her use a recipe. I would see her get a general idea from The Joy of Cooking and then make it her own. This recipe is Whole 30 compliant, AIP, and WW Freestyle friendly. It’s also busy people friendly because it is SO low prep. I serve it with roasted broccoli and gluten free pasta. Hope you enjoy! Simple Baked Shrimp with a Lemon Garlic Sauce
Serves 4, 1 Weight Watchers Point
1.5 pounds peeled, deveined shrimp with the tails off
1 Tablespoon extra virgin olive oil
Juice of two lemons
Zest of one lemon
3 cloves garlic, pressed or minced
2 TB dried parsley (or fresh if you have it on hand)
Salt and pepper
- Place shrimp and all ingredients in a large ziplock bag and allow to marinate for at least 30 minutes. The longer the better!
- Preheat oven to 425. Prepare a baking dish by spraying it with a bit of oil. I use the fine life mister to prep all my baking dishes.
- Transfer entire contents of the bag into the prepared baking dish and bake for 10-12 minutes, until shrimp are opaque. The sauce should also be bubbling a little bit.
- Finish the dish with an extra squeeze of lemon juice and a drizzle of evoo (optional) and serve.
