I have always been a huge fan of Indian food. Growing up, whenever we went into Manhattan we always had to stop for dinner at an Indian restaurant. There’s so many things to love about Indian food, that I often try to recreate some of those dishes at home. One of my favorite sides to order is coconut rice. It’s creamy and bursting with flavor and of course… rice! Now that we eat a mostly Paleo diet, I wanted to recreate this beloved side at home using cauli rice and the spices I have on hand. It’s totally possible to create a tasty Indian inspired dish using spices you already have or can find at a conventional grocery store. This recipe is a great side for any curry dish or on it’s own! You could even add chicken or shrimp to make it a whole meal! Enjoy and let me know on Instagram and in the comments if you make it!
South Indian Coconut Cauliflower Rice
Serves 4, 4sp per serving
14 oz frozen or fresh riced cauliflower
3 TB coconut cream (solid at the top of canned coconut milk)
2 TB unsweetened shredded coconut
3/4 tsp curry powder
1/4 tsp ground ginger
1/4 tsp ground mustard powder
Salt and pepper to taste
1. Heat a medium skillet sprayed with oil over medium high heat. Add cauliflower rice and cook following package instructions.
2. Once cauliflower rice is heated through, add coconut cream and stir to incorporate with cauliflower rice.
3. Reduce the heat to low, add all the spices and half the shredded coconut. Allow the flavors to meld together for 2-3 minutes, stirring to incorporate all the spices with the rice.
4. Remove from heat and sprinkle remaining shredded coconut on top.
